مولانا صدر الدین اصلاحی
افسوس ہے کہ ۱۳؍ نومبر ۱۹۹۸؁ء کو ہندو پاک کے مشہور عالم و مصنف، جماعت اسلامی کے ممتاز رہنما اور مدرستہ الاصلاح کے مایہ ناز فرزند مولانا صدرالدین اصلاحی انتقال فرماگئے، اناﷲ وانا الیہ راجعون۔ وہ عرصہ سے بیمار اور موتوا قبل ان تموتوا کی تفسیر بن گئے تھے۔
ان کی ولادت ۱۹۱۶؁ء میں ہوئی، ان کا تعلق اعظم گڑھ کے ایک گاؤں سیدھا سلطان پور سے تھا، جہاں افغانستان کے زئی قبیلہ کے پٹھان آباد ہیں، مولانا محمد شفیع بانی مدرستہ الاصلاح کا تعلق بھی اسی خاندان اور گاؤں سے تھا۔
علامہ شبلیؒ کے وطن بندول میں ان کی نانہال تھی۔ یہیں رہ کر انہوں نے بلریا گنج سے مڈل پاس کیا، پھر عربی تعلیم کے حصول کے لیے مدرستہ الاصلاح میں داخل ہوئے، طالب علمی کے زمانے میں وہ اور ان کے ایک دوست مولانا محمد عاصم اصلاحی جو ان سے ایک درجہ آگے تھے، اپنی ذہانت و صلاحیت کی وجہ سے پورے مدرسہ میں ممتاز تھے، تعلیم مکمل کرنے کے بعد اول الذکر پٹھان کوٹ اور موخرالذکر دارالعلوم دیوبند چلے گئے مگر ان کی آمد و رفت ایک دوسرے کے ہاں ہوتی رہتی تھی، بعد میں ان کی راہیں مختلف ہوگئی تھیں، اسی لیے جب ملتے تو خوب طنز و تعریض اور فقرے بازی ہوتی، طالب علمی میں یہ دونوں حضرات اپنے استاد مولانا نجم الدین اصلاحی کے بڑے چہیتے تھے، انہوں نے اپنی کتاب ’’یادگار سلف‘‘ میں دونوں کا ذکر بڑے والہانہ انداز میں کیا ہے، مولانا صدرالدین صاحب کے متعلق لکھتے ہیں:

Islamic Approach towards Social Construction: An Analytical Study in the Light of Hazrat Umar Farooq’s (RA) Wisdom and Thought

تعمیرِسماج کا اسلامی منہج : حضرت عمر فاروقؓ کی فکر و بصیرت کی روشنی میں تجزیاتی مطالعہ The modern era is considered as advanced and humanized in terms of materialized advancement only. Today the leading societies of the world have created a self-sufficient religion in the name of humanism and have set standards ignoring Divine guidance. Thus, man has the right to decide the rules and norms of society on his own goodwill. As a result, the breaking of family system, appearance of gay and homosexual relations, etc. Are being considered as legitimate in many countries where religion is no more considered a guiding principle. On the other hand, revealed religions have focus on the development of humanity in terms of both the ethical and materialistic perspectives. Islam as religion has provided a model of such an advancement and social change in history that has proven that Divine guidance is major source for betterment and development of civilization and humanity. This was practically proven in the time of Muslim golden rule in the world. The caliph Umar (R.A) was the man who introduced for the first time, the principles and values, which has changed the Arabs to a civilized and humanized nation. This huge change was made possible in the light of Divine guidance. In this academic article all such norms, values, and principles that were introduced by Sayyīdnā Umar (R.A) which brought a social change in his Era are discussed. Facts have been collected from historic books and presented following the descriptive and analytical method. Although, the information was narrated and scattered in the books, no proper study was introduced where the role of these reforms in the social construction was analyzed. The aim of the study has to investigate the historic facts of social change in the era of the righteous Caliph Sayyidna Umar bin Khattāb and prepare a guideline for the humanity in present era.  

Influence of Indigenous Cultures and Ripening Temperatures on Cheddar Cheese Quality

Cheddar cheese cultures were isolated and purified from indigenous sources using various microbiological techniques and characterized on basis of sugar fermentation, biochemical and enzyme activity tests, growth at various temperatures, pH and NaCl concentrations and using API identification kits. Raw milk and sour cream were found the most suitable indigenous sources for isolation and purification of Lactococcus lactis ssp. lactis and Lactococcus lactis ssp. cremoris. The later was differentiated from the former by no acid production from maltose, ribose, mannitol, arabinose, inositol, trehlose, negative arginine hydrolysis test, no growth either in 4% w/v NaCl or at 40°C and pH 9.2. Commercially available and locally isolated strains of Lactococcus lactis ssp. cremoris and Lactococcus lactis ssp. lactis were propagated in combination of 95:5 to prepare the mother cultures. These mother cultures were employed in standardized buffalo and cow’s milks to manufacture Cheddar cheese and ripened at 4°C and 12°C for 120 days. During ripening, cheese was evaluated for physico-chemical composition and sensory quality. Buffalo milk cheese contained significantly higher fat, protein, ash, lactose, sodium, calcium, potassium and organic acids contents; particularly lactic, citric and butyric acid contents as compared to cow. Cheddar cheese prepared from indigenous cultures had significantly lower lactose and pH and higher acidity than commercial cultures. The concentrations of all the organic acids produced by indigenous cultures were distinctly higher than commercial cultures. During ripening, lactose and pH decreased while acidity increased significantly. The concentrations of all the organic acids increased highly significantly during ripening and elevated temperature considerably accelerated the production of all organic acids except pyruvic acid. Starter cultures and ripening temperatures substantially influenced the aldehydes, ketones and alcohols, while milk composition considerably affected the alcoholic and sulphur compounds. Descriptive sensory evaluation indicated that cheese samples prepared from buffalo milk using indigenous cultures were scored significantly higher for most of the attributes. Elevated temperature perceptibly accelerated the development of odor, flavor and texture characteristics during ripening. Hence, it is concluded that indigenous starter cultures and buffalo milk produced the cheese with improved quality and elevated temperature accelerates the process of ripening.
